NIGELLA'S BREAKFAST BARS
Girls, this is a recipe from my very favorite cook book, "NIGELLA EXPRESS" i make these once a fortnight (every fortnight) for hubby to have in his lunchbox as a snack!!!
i have slightly altered the base recipe to our taste but basically if you stay within the weight amounts of each category you can put in whatever you like!!!

BREAKFAST BARS
1 x 375g can condensed milk (i use skim)
275g rolled oats (not instant)
70g shredded coconut
100g mixed seeds (i used sesame, slivered almonds, pumpkin & sunflower seeds)
225g dried cranberries (craisins) (i mix this up using, craisins, dried apples, chopped, dried apricots, chopped and sultanas, and sometimes a sprinking of dark or white choc bits, or you could put 125g fruit and 100 g unsalted peanuts)
preheat oven to 130 degrees and line a baking tray with baking paper or grease (i use a 11" x 14" lamington tray)
warm condensed milk in a jug or bowl til just warm and fluid
place all other ingredients in large mixing bowl
add condensed milk and combine,
place in tray and smooth down to create a smooth surface making sure mixture goes into the corners of the tray
bake for approx 1 hour, remove from oven, after approx 15 mins cut into pieces ( i get usually 28 bars from mine... depending on what size you would like them)
these bars keep for at least a fortnight in an airtight container (that is if you can resist them for that long)

Thanks Maria, this is Lou's staple morning/arvo tea at work everyday!!! and it is sooo easy to make!!!!

Were just about to make them had to convert all the measurements to cups first have to substitute the seeds to bran flakes as we don't know if Drew is allergic to nuts yet.....

Yes these were a total hit okay I added half a cup of choc chips to mine lol, but next time I won't as they ate them fine, have to hide them now other wise there won't be anymore for school lunches tomorrow....
